FAQs

Stone Flower (also known as Dagad Phool, Kalpasi or Black Stone Flower) is a type of lichen — a symbiotic organism of fungi and algae — that grows on rocks and tree bark. It is used as a spice in Chettinad cooking and Hyderabadi biryani masala for its uniquely woody, earthy aroma that no other spice can provide.

Stone flower has a distinctly earthy, woody and moss-like aroma — unlike any conventional spice. It doesn't have a dominant flavour on its own but adds a complex depth and a slightly bitter-earthy undertone to spice blends. Its contribution becomes apparent when you compare a biryani made with and without it.

Rinse stone flower lightly in water to remove any dust. Add 2–3 small pieces to hot oil along with other whole spices when making biryani, Chettinad curries or meat masalas. It can also be included when making homemade garam masala. Remove the pieces before serving as the texture is not pleasant to eat.

While stone flower is a staple in Chettinad and Hyderabadi cooking, it has been relatively unknown elsewhere. However, as authentic regional Indian cooking gains popularity, it is becoming available online nationally. Natural & Fresh makes this rare ingredient accessible across India.
